The Manos Juntas project works in one of Colombia's best-known coffee-growing areas, the Cauca region, where high-altitude plantations, volcanic soil and a balanced microclimate give exceptional foundations for growing outstanding coffee. The aim of the initiative is for smallholders to show the region's true character by working together and helping one another. The name Manos Juntas — “joined hands” — reflects the spirit of the project faithfully: the growers work closely together on processing, quality control and sharing what they know. Because of that, the coffee tells the story not of a single farm but of an entire community's commitment to quality without compromise. This naturally processed lot is made from 100% hand-picked cherries, dried whole with the fruit still on. Over the slow, controlled drying, the beans gradually take on the fruit's natural sweetness and complex aromas. Careful attention keeps fermentation from going too far, so the result is a clean yet rich flavour profile.

About this lot
We buy small lots and roast them in batches we can taste all the way through. Every bag carries its roast date — not a best-before, because coffee does not spoil, it only loses its best.
