This cascara comes to us from Colombia, courtesy of the Argote family. Juan Pablo took his father's work on the farm in an entirely new direction, and alongside a great many experimental processing methods, cascara got its chance too. Cascara is the dried flesh and skin of the coffee cherry, from which you can brew something very exciting, close to a tea. Because the plants are tended in the knowledge that their fruit will become cascara, no pesticides are used at all. This cascara is made by High Pressure Processing, a non-thermal pasteurisation method that uses high pressure. Recommended preparation: 20 g of cascara poured over with 400 g of boiling water, steeped for at least 4 minutes. · Nariño

About this lot
Cascara is the dried flesh of the coffee cherry — the part most roasteries send to the compost. Brew it as a tea: 8 g, 250 ml of water at 90 °C, 5 minutes.
We buy small lots and roast them in batches we can taste all the way through. Every bag carries its roast date — not a best-before, because coffee does not spoil, it only loses its best.
