This coffee comes from the mountainous part of Puebla state, where steep slopes, plentiful rainfall and rich volcanic soil make an ideal environment for growing coffee. The region is home to family farms several generations deep, committed to producing high-quality coffee for decades. The name Dos Rios refers to the rivers crossing the area, which not only shape the landscape but play a key part in the processing as well. The growers put great emphasis on selective picking, so only fully ripe cherries are processed. This regional selection is washed: the fruit is removed from the picked cherries, which then go through a short fermentation in water. Afterwards the beans are washed thoroughly and dried slowly and evenly, so the cup shows clean, well-defined aromas. · Chiapas

About this lot
Dos Rios is a smallholder cooperative in Chiapas where the coffee grows in the shade, under banana and avocado trees. Best with milk — that is how the hazelnut character really comes out.
We buy small lots and roast them in batches we can taste all the way through. Every bag carries its roast date — not a best-before, because coffee does not spoil, it only loses its best.
