The Kintamani region sits in the northern highlands of Bali, around the Batur volcano, where a cooler mountain climate and a wide daily temperature swing slow ripening down and add a great deal to the coffee's complexity. Coffee here is grown organically, though not for the certificate. The region's growers form an organised group called Subak Abian, who believe that a person finds happiness by building good relationships with other people and with nature. The farmers generally harvest from May to October, and the natural processing dries the hand-picked ripe cherries with the fruit still on. Processing and origin together give the drink restrained acidity and a full body. The flavour profile is well structured and rich, with a long finish. · Kintamani, Bali
