Papua New Guinea is one of those coffee-growing countries with a great many small farms whose cherries are processed not on the farms but at central mills. This coffee comes from the Kindeng station, which processes the coffee of around 1,500 farmers. Drying takes roughly a month, and it is during that time that the faintly alcoholic notes reminiscent of red wine develop and the sugars concentrate — the result being an astonishingly syrupy, flavour-packed coffee. · Western Highlands

About this lot

THE STORY

Papua New Guinea rarely makes it onto the shelf, yet Typica has survived here in almost untouched form. The natural processing brings tropical fruit and molasses, which is unusual for this origin.

We buy small lots and roast them in batches we can taste all the way through. Every bag carries its roast date — not a best-before, because coffee does not spoil, it only loses its best.
