Ethiopia
A textbook washed Ethiopian, with the classic floral character we have come to expect from this region and this processing. Alongside the jasmine florality, peach notes come through very intensely; it works particularly well as an espresso tonic or as cold brew. The Halo Beriti station has been running since 2014, and over more than ten years has continuously fine-tuned its processing. As a result this coffee, too, was sorted by hand while still in cherry, so that only perfect fruit went on to be processed. · Guji, Oromia

About this lot
Several hundred smallholders bring their cherries to the Halo Beriti washing station, all of them from the hillsides of Guji. This is the kind of Ethiopian worth tasting lukewarm as well — as it cools, it turns more and more towards black tea.
We buy small lots and roast them in batches we can taste all the way through. Every bag carries its roast date — not a best-before, because coffee does not spoil, it only loses its best.
