Costa Rica is one of the best-known origins in the specialty world. Finca San Calletano is tended by Diego Arabaca, and the processing is handled by the Alto San Juan micromill. Diego's farm is in the Tarrazú region, whose cool nights and volcanic soil create excellent conditions for slow ripening and the concentrated sugars that come with it. The farm sits at the top of the hillside, where yields grow year after year. That lets him experiment with several processing methods alongside stricter quality control.
