Chelchele is a notably high-altitude coffee-growing area in Ethiopia's Yirgacheffe region, home to a great many smallholdings whose harvest is processed at central stations. The altitude, the cool nights and the mineral-rich red soil together slow ripening down, and that is what gives Yirgacheffe coffees the vibrant acidity they are famous for. The area grows mainly indigenous Ethiopian varieties, selected over generations for the quality of their flavour. This lot is naturally processed, so the sugars soaking into the bean balance the acidity the origin gives it — which is why natural Ethiopians are such favourites among specialty drinkers. About this lot
A natural Yirgacheffe: the cherry is dried whole, and the flavour of the fruit carries into the bean. If you are only now getting to know natural coffees, this is the one to start with.
