Rwanda has everything outstanding specialty coffee needs: high altitude, regular rainfall and organically structured volcanic soil. The Kanya washing station was founded by Kanyamibwa Edmond in 2014, with the aim of learning and perfecting processing methods. The station grew quickly, turning out more coffee and better coffee thanks to its high standards. The cherries first go into a large tank, where the ones that do not make the grade are separated out. After mechanical depulping the coffee spends 24–36 hours dry, and is then washed and dried on raised beds for a further 15–22 days. About this lot

THE STORY

Rwandan Red Bourbon grows on the steep hillsides above Lake Kivu, and it always brings a distinctive blackcurrant edge. It shows itself best as filter, and stays very lively as espresso.

We buy small lots and roast them in batches we can taste all the way through. Every bag carries its roast date — not a best-before, because coffee does not spoil, it only loses its best.
