The plantation is located in the Jaén province of the Cajamarca region, in the northern Peruvian Andes, where the high-altitude climate, mineral-rich volcanic soil, and tropical rainy weather create exceptional conditions for coffee production. The farm, Finca Los Cedros, is a family-owned micro-farm of just 0.5 hectares, managed by Elvis Ronal Saavedra Saucedo. Alongside the 2,500 Caturra trees growing on the farm, the producer places a strong emphasis on biodiversity, planting native forest trees to provide natural shade and protect the local ecosystem. Following selective hand-picking, the coffee was processed using the classic washed method, which perfectly highlights the finest notes of both the terroir and the variety. As roasters, we chose this lot for our offering due to its cleanliness, elegant and vibrant acidity, and the complex sweetness characteristic of a washed Caturra. It is an excellent choice for modern filter brewing methods, but it also shines as an exciting, fruitier espresso.

About this lot
In northern Peru, most of the coffee is organic, simply because there was never any money for pesticides. A round, caramelly cup that doesn't demand too much from you, even at seven in the morning.
We buy small lots and roast them in batches we can taste all the way through. Every bag carries its roast date — not a best-before, because coffee does not spoil, it only loses its best.
