The Hakuna Matata farm is in northern Ecuador. It is run by Henry Gaibor and Verena Blaser, who used to work in medicine and brought the precision and systematic thinking of that work with them into coffee growing. The farm's own micromill lets them control fermentation and drying precisely, which is what clean cup profiles depend on. The high humidity and cool nights of the region slow ripening down. That microclimate is what gives these coffees their aromatic complexity and clean acidity. This Geisha is picked selectively by hand from small plots. In the cup it is very clean and light-bodied. Our rarest lot: a Geisha that is more about aroma than flavour. It really shows itself as filter.
We buy small lots and roast them in batches we can taste all the way through. Every bag carries its roast date — not a best-before, because coffee does not spoil, it only loses its best.
