The Guariroba farm lies in Brazil's Campo das Vertentes microregion. It was established in 1939 and is still in family hands today, run by Gabriel Lamounier Vieira, Elisa Paiva Lamounier and Homero Aguiar Paiva. The name has long been known among Brazilian specialty coffees. Guariroba's coffees have reached the finals of the Cup of Excellence several times, and took first place in the Naturals category in 2016. This lot combines the Red Catuai variety with anaerobic fermentation: after picking, the coffee ferments in a sealed environment and is then sun-dried, so that the activity of the microorganisms can give the fermentation its character. Red Catuai is an arabica variety widely grown in Brazil which, together with the local terroir, delivers consistently high quality — especially in the microlot category. On top of that the harvest was hand-sorted, and only the beautiful, fully ripe, large beans went into this lot, which is what the 16UP grade refers to. Guariroba is well known for approaching fermentation research and development scientifically, with a strong emphasis on using the local microbiota and on bringing out what is particular to the terroir.
